it's actually really apt that i add Kilian to the whole Aja/Weiss extended universe of lovers because i did decide that Kilian's family had a chalet in the swiss alps, and Kilian speaks german in addition to french, then Weiss is french on their mom's side so they speak french in addition to german

the two of them can have entire conversations in front of Aja without him understanding a word, so they can plot while he gets all huffy and pouty

Quinoa Bake & Salsa Verde Recipe

I was asked for a recipe, and honestly this is gonna be easier to format here in a post than through tumblr DMs. Also, this is an excellent recipe for meal prep so if any of y'all are interested give it a whirl. Please also keep in mind, I'm giving you my cooking process. You're welcome to make it your own. 🩶

Idk if this will be helpful, but for ease of reading ingredients are listed in green, side instructions for ingredients in pink, and tools used along the way will be in purple. Anyways, both recipes below:

Salsa Verde

Ingredients:

7 tomatillos - husks removed, rinsed, & quartered

1 poblano pepper - halved & seeds removed

1 jalapeño - halved, seeds left in

1 white onion - outer layers removed, quartered into wedges (yellow onion has similar flavor profile so it can be subbed)

1 shallot - outer layer removed

2 limes - halved

Handful of cilantro

Salt - to taste

Water - for consistency

Step 1. Set oven to broil and make sure your topmost rack will keep your veggies about six inches from your heating element. While the oven heats, go ahead and prep your ingredients.

Step 2. Arrange your tomatillos, poblano pepper, jalapeño pepper, and white onion on a broiling pan. Put into oven and cook for 10-12 minutes, rotating your pan halfway through the cook time.

Step 3. Put the cooked ingredients into a blender, and add in your fresh shallot, cilantro, and a fair couple pinches of salt. Squeeze in the juice of your limes, don't be afraid to take a spoon to the inside of the lime and rotate it around in there to really get all that juice out. Add in a couple tablespoons of water, and blend until ingredients are well blended and you have reached a desired chunkiness. It is ready to serve.

Chicken Quinoa Bake

Ingredients:

3 cups cooked quinoa - rinse before cooking, salt it appropriately when cooking; use chicken broth instead of water

2 good sized chicken breasts - salted & peppered, cut into thin, 1/4" sized strips, and cooked/browned appropriately

2 16oz cans of black beans - drained and rinsed

16 oz tomato sauce

1 1/2 cups salsa of your choice - I usually use salsa verde, hence why I decided to make it this last time from scratch

1 lime - halved

3 cups shredded cheese - I like a mix of Monterey Jack and sharp cheddar; two 12oz preshredded cheese bags is the perfect amount

1 tablespoon chili powder

1 1/2 teaspoons cumin

1 teaspoon oregano

1 teaspoon onion powder

Salt - to taste

Pepper - to taste

Freshly chopped cilantro leaves - for garnish

Step 1. Preheat oven to 425º & grease a 9"x13" baking dish.

Step 2. In a large bowl, combine quinoa, chicken, black beans, tomato sauce, salsa, chili powder, cumin, oregano, onion powder, salt, and pepper. Squeeze in the juice of the lime once again working to get as much of that delicious fluid out of your little fruit. Mix everything together well.

Step 3. Spread half of your mixture into your baking dish ensuring an even layer. Spread half of your cheese over this, if using multiple cheese types, you'll use both of them here. Spread the remaining mixture atop your cheese layer, and then cover the top with your remaining cheese.

Step 4. Bake uncovered on your middle rack for 20-25 minutes, until the cheese on top is hot and melted. Move to top rack and broil for 1-2 minutes (until cheese is toasted and golden, this happens quickly). Garnish with fresh cilantro and serve.
